Looking for something light for lunch that is still Keto and delicious? Here’s one you might want to try. Since my husband, Kevin, and I have learned about cauliflower rice, this is becoming a favorite for a lunchtime meal at our house.
We used to love a tuna rice bowl, but Keto teaches that rice is a no-no in the beginning while we are training our bodies to burn fat instead of glucose. Rice and other refined grains convert to sugar from the high glucose index for both white and brown rice. Cauliflower rice is a great alternative. For instance, on a scale of 0 to 100, rice has a glycemic index rating of 72 per normal serving while cauliflower has a glycemic rating of 0 to 15.
Making cauliflower rice is really easy although can be a little messy – in our kitchen, anyway! 🙂 To get started, cut off all of the leaves of the cauliflower but keep the center stem as it will grate up, too. We used a food processor to grate the head of cauliflower. If you don’t have a food processor, use a hand grater or mandolin. Anything to make the head of cauliflower into what looks like grains of rice.
We cooked the cauliflower rice in a large skillet with some melted coconut oil. We use the Kirkland Brand coconut oil for just about everything. Turn the rice often in the pan to keep from sticking and from getting brown. This will take approximately 10 to 15 minutes depending on the size of the head of cauliflower. You want to cook the cauliflower long enough to make it soft and similar texture to cooked rice.
In another bowl, mix tuna fish and mayonnaise to taste. We like the Kirkland brand Albacore Tuna Packed in Water.
Spoon some rice into a bowl.
We like to add rice vinegar, soy sauce or tamari sauce, and Furikake rice seasoning.
Just a little of each adds a nice flavor.
Add some tuna and mayonnaise mixture on top.
Kevin likes his on the hot side, so he adds Chile Garlic sauce.

Hi, Susie. Thanks for your comment. We sure enjoy cauliflower this way. Another favorite of ours is to mash the cauliflower. We recently served it at dinner to guests, and they had no idea that it wasn’t mashed potatoes. 🙂
