Try This Delicious Lemon Chicken Dish!

Is there anyone who doesn’t like lemon chicken? If you’re like me, you’re always looking for good recipes to prepare that are healthy, not too complex, and not too expensive to prepare.  Well, here’s what led me to this delicious recipe that I’m happy to share with you:

A couple of weeks ago, my husband and I were on the road and stopped for dinner in a restaurant. I ordered their lemon chicken dish and really liked it. I took half of it home and had it again the next night and thought about looking this up online to see if I could find a lemon chicken recipe to make for us.  Well, there are tons of them, but luckily for me and my husband, I decided on the one I’m going to share with you here.

The picture looked yummy, the instructions were simple and not too many ingredients. I changed the recipe slightly, and I’ll make note of the few things I did differently.  After asking LaughingSpatula if she would be OK with me putting up her recipe and her link to her site, she agreed, so now all of us can benefit.

 

Lemon Chicken So Tender It Falls Off The Bone

The chicken was so tasty and just fell off the bone easily. The sauce was delicious which flavored the potatoes when cut open on our plate. Following this recipe as far as the number and amount of ingredients listed fed the two of us three meals. Now, that’s a pretty inexpensive dish, right?

The pan I used is a 15” x 10” (inside measurement) Pyrex glass roasting pan. All of these ingredients filled it up perfectly. I was going to use chicken breasts which I had on hand but after reading the instructions, I understood the reason for bone-in pieces so I bought one package of organic chicken thighs with bone and skin and one package of organic chicken drumsticks with bone and skin. This gave 10 pieces (4 thighs and 6 drumsticks) from Costco.

Roasted Lemon Chicken with Potatoes and Rosemary

Ingredients

  • 8-10 pieces of bone in chicken I used organic bone in, skin on thighs and drumsticks = 10 pieces
  • 1 lb . baby red potatoes keep whole
  • 1/2 in onion – cut large pieces I used one large whole yellow onion sliced thick
  • 2 lemons 1 sliced and 1 juiced I used 1-1/2 lemons to juice and 1-1/2 lemons sliced into the dish. I also used one lime to juice just because I already cut into it thinking it was a lemon. I think it added a nice little “zing” and would do it again even though it started as a boo-boo!
  • 1/3 cup olive oil
  • 2 cloves garlic minced we really like garlic, so I chopped up six large cloves
  • 1 tablespoon fresh Rosemary plus sprigs for garnish
  • 1/2 teaspoon crushed red pepper flakes
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray a glass 13-in. x 9-in. baking dish with cooking spray (I used coconut oil to grease the pan). Arrange chicken pieces (skin side up), potatoes, sliced onion and lemon slices evenly in pan.
  3. In a small bowl, whisk together lemon juice, olive oil, garlic (I cut up the cloves of garlic and sprinkled them over the entire pan so they would be spread out evenly), rosemary, crushed red pepper flakes, salt and pepper. Pour mixture all over chicken and potatoes. Sprinkle all over generously with additional salt and pepper.
  4. Bake uncovered for about 1 hour, or until chicken and potatoes are fully cooked.

Serve Lemon Chicken With A Side Of Green Beans Or Broccoli

You might be able to see from the photo above that I served this chicken dish with fresh green beans. One of the leftover nights, I steamed some asparagus. Both were a nice complement to the tangy lemon flavor.

This dish would not be a keto dish because of the potatoes, but a paleo cook might like it. Unfortunately, I don’t have the nutritional breakdown. I just know that with a healthy green side dish with a serving of the chicken, potato and some sauce, you have a tasty, healthy and light meal.
