The focus is still on weight loss for my husband and me, and so far I have to say that we are doing good – not great, but good! Why? Well, if it’s confession time, we did something a couple of days ago that was a big indulgence for us and had nothing to do with a weight loss mindset. 🙁
Do you like going to the movies? Well, we do, and we hadn’t been for awhile because of the recent holidays pre-empting any other activities or form of entertainment, but when Kevin asked if I wanted to go, I immediately said “yes”.
For us, going to the movies includes refreshments, and they’re always the same: a bucket of popcorn – with layered butter, of course – and two hot dogs. The popcorn is for both of us, and the two hotdogs are for my Sweetie! We get a large water, too, because water is so healthy for us, right? Haha!
The good news is that in spite of our little diversion when I weighed yesterday morning, my weight still went down, which put a big smile on my face! I started this journey on January 1st (doesn’t everyone start a new weight loss program on the first of the New Year?) at 145.4 pounds and yesterday’s weight (on January 8th) was 141.0 pounds. I was delighted to say the least!
So, to keep the good healthy trend going, I made a light dinner keeping in line with our weight loss Keto eating program. It was a Keto Pizza recipe that I had been wanting to try.
I’ll make a separate post about this tasty dish soon, but for now, I wanted to talk about our lunch today. “Keep it simple and easy”, Kevin said, and that’s just what it was. It was a “clean out the refrigerator” kind of lunch as I looked inside several containers in the ‘fridge to see what surprises there were.
Actually, what I found was pretty simple. We had some leftover salad from last night plus some more fresh greens to add to it. I know that some people will not eat leftover salads, but we don’t have any problem with that as long as it hasn’t become compost, as Kevin calls it! 🙂
I learned recently from a local chef that a very nice and healthy salad dressing is to smoosh a ripened avocado and a little over-ripe tomato with your hands into your salad greens. It’s a little messy to be sure, but it works great, so that’s what this salad got for dressing.
So now, emptying out the ‘fridge continued. I had a couple of crispy radishes that went in, some black olives that got cut up, some green onions got sliced up, and the dressing was simply oil and vinegar. Here are some affiliate links to products we enjoy. We really like Kirkland Organic EVOO (Extra Virgin Olive Oil) and Kirkland Balsamic Vinegar. We just sprinkle some of each on top and it’s really good!
For some added protein, we had some leftover tuna salad which made a nice topping to the salad greens. A heaping spoonful went on top of each of our salad and we added a few delicious green olives stuffed with jalapenos that we got from Olive Pit in Corning, Ca. To top it off and to give it some extra healthy fiber, I like to sprinkle psyllium husk on top. When it mixes with the oil and vinegar, it tastes really good. To me, it gives a nutty taste. It is not Kevin’s favorite so he leaves that out. The brand that we recently bought is NOW Whole Psyllium Husks.
Simple and easy but very tasty AND healthy!
