Learn How To Make Spanish Chicken Recipe in Slow Cooker

Spanish Chicken is a dish that Kevin taught me years ago. It’s been his favorite for a long time, and now Spanish Chicken is mine, too. We make it in another one of my favorite kitchen tools – a slow cooker.

This recipe is made using a whole chicken and cooking in a slow cooker, or crock pot as some call it. Ours is a 6-quart cooker which works great using a 3 pound up to a 5-pound chicken. Today, we have a 4.22 pound chicken.

The probe makes cooking meat a no-brainer for it to come out just perfect. I am choosing not to use the probe for this recipe because I am not leaving the house today and can check on the progress of how the chicken is cooking.

I like the size of the Hamilton Beach Slow Cooker, too. It works perfectly for our size family of two plus we can get several nights of leftovers with the portion of food we can cook in it. We love the leftovers, especially me. Saves so much time on busy days to re-heat a delicious leftover meal.

The aroma that fills the house when cooking this recipe makes our mouths water! It’s a delicious blend of pungent flavors that all work great together. I have to be careful to reduce the heat from high to low on the slow cooker during the process otherwise the chicken can get dried out even though it’s cooking in so many juices. I hate it when that happens!

When I searched for Spanish Chicken online, I noticed that most of the recipes that were presented use chicken pieces. I didn’t find a single recipe using a whole chicken as we do. One day, I’ll experiment with a new online recipe. We just find it hard to change from this all-time favorite.

Not only is it delicious but it’s so simple to put together! The main thing for me is to remember to change the cooking temp from high to low on the slow cooker. I usually start on high and then wait until the juices start a slow simmer. Then I switch over to the low temp even if I don’t have all day to cook on low. In 5-1/2 or 6 hours, the chicken cooks just right. Often I start this dish around noon time and by 6 PM, dinner is ready.

How To Make Spanish Chicken in Slow Cooker

These are the ingredients I use for this recipe:

We buy organic fruits, vegetables and meat every chance we get, such as the yellow onion above.

Spanish Chicken in Slow Cooker onion and garlicSlice the onion rather thick. Chop garlic and add both onion and garlic to slow cooker.

Wash chicken inside and out. Place in a colander to drain thoroughly, then place on top of onion and garlic in slow cooker.

Empty entire jar of olives with juice on top of Chicken. Pour both cans of beer into slow cooker.

Empty both cans of diced tomatoes with juice on top of chicken. Spread it out so the lid can cover without touching.

Place lid on top and set timer and heat control. I start mine on high and then reduce to low if I have enough time for the chicken to cook. Takes approximately six hours on low and approximately four hours on high.

Ingredients

  • 1 3 to 5 Pound Whole Chicken Use Organic if possible
  • 2 12 Fl Oz Cans Beer Alcoholic or Non-Alcoholic
  • 1 16 Oz Jar Green Olives Stuffed with Pimentos
  • 2 14 Oz Can Diced Tomatoes
  • 1 Large Yellow Onion Sliced Thick
  • 6 Cloves Garlic Chopped
  • Salt and Pepper To Taste

Instructions

  1. Slice onion and place in bottom of slow cooker
  2. Chop cloves of garlic and place on top of the onion
  3. Wash chicken inside and out and let drain.
  4. Place chicken in slow cooker on top of onion and garlic.

  5. Pour cans of beer on top.
  6. Empty jar of all olives and juice on top.
  7. Pour both cans of tomatoes with juice on top.

Recipe Notes

Set cooker on High to start. If pressed for time, keep on high for 4 hours. If you have more time, change setting to Low for 6-1/2 hours. Test for doneness. Try not to overcook as the chicken will become dry. Serve with rice or noodles and a side of vegetables or salad. We are two people and get about three dinner servings of this meal. This is one of our favorites.
